Another Letter from Baby

Dear Family and Friends,

Many of you have wondered how I am able to accomplish such feats as posting on a blog when I am only the size of a mango. Well first off my Mom and Dad are very intelligent people and they talk to me everyday, Mom sings me songs on the way to and home from work, and every now and again Mom and Dad read me stories. Even though my eye lids are fused shut I can recognize light and that Mavis Beacon program has really helped me master my typing skills. Don't even question how I got the computer....my Dad works for HP! Can you say EPP (Employee Purchase Program)!

I like to listen to Mom and Dad talk about me. Mom talks about nursery colors, birth plans, getting a new car, and picking up the pram. All Dad talks about is opening a 529 for me (that's a college savings plan). I hear a lot of people asking about when I am going to let you know if I am a boy or girl. Mom's appointment is 9 short days away. I haven't decided if I am going to cooperate yet, but you will all know soon enough.

Last night Dad made us Matzo Ball soup and then Mom and I made Mandelbrot for Dad. Mom taught me one very important rule: Do not eat the dough raw! Even though it looks good it doesn't taste good! Dad ate about half of it when it came out of the oven last night. It is a very yummy passover cookie. Here is the recipe if you have anyone missing cookies for the next 8 days:

2 3/4 cups matzo cake flour
3/4 cup potato starch
1/2 tsp salt
1 cup (2 sticks) unsalted butter room temperature
2 cups plus 4 tsp sugar
6 large eggs
1 1/2 cups semi sweet chocolate chips
1 cup chopped walnuts
1/2 tsp cinnamon

1. Place rack in the middle of the oven and heat to 350 degrees. Whisk together cake flour, starch, and salt. Lightly grease baking sheet
2. Use electric mixer to beat butter until creamy. Gradually add 2 cups of sugar until fluffy (2 min). Add eggs one at time, beating well after each addition (2 min more)
3. Add dry ingredients one cup at a time. Add 1 1/4 cups chocolate chips and walnuts use a spoon to combine. Dough will be sticky.
4. Divide dough in half and place on prepared tray. Pat into a rough rectangle 8 by 6 by 1 inch. Sprinkle with remaining 4tsp sugar, 1/2 tsp cinnamon and 1/4 cup chocolate chips.
Bake for 40-45 minutes, cool on wire rack for 10 minutes and then while still warm transfer to cutting board and slice.
