Valentine's Day

Well I woke up this morning to find that Craig had left some goodies out for me to find before work. It was very sweet. He had included some of my favorites like Swedish Fish and a Cadbury fruit and nut bar. Those were nice but what almost drove me to the tears was the journal. In the card he wrote that the journal was to write down thoughts, joys, fears during the pregnancy and one day we would be able to share it with the baby. As he wrote, "we only have ONE first child"

Last night after class I started to write in the journal. At first it was hard to know where to start. I decided to do a page where I wrote "About your parents" I was saying general things about each of us. No sooner than I finished writing "Your Dad LOVES chocolate" Craig says, "It's Valentine's Day. I like chocolate. I'm making choco-hoto-pots" I showed him what I just wrote and he started to crack up, in only the way Craig can. Maybe I should also add Dad has a funny laugh.

Craig made the choco-hoto-pots and I dug into mine until I remembered runny batter may mean undercooked eggs. So I scooped out all the yummy goodness and passed to Craig, he didn't complain.

I have decided to share the recepie for Choco-hoto-pots from Nigella Lawson: (good & easy)

3/4 cup semisweet chocolate chips
1 stick unsalted butter
2 large eggs
3/4 cups sugar
3 tablespoons all purpose flour
1/2 cup white chocolate chips
butter to grease ramekins

Preheat oven to 400. Butter four 2/3 cup ramekins
Microwave butter and chocolate chips in microwave
In a seperate bowl combine eggs, sugar, flour. Add cooked chocolate mixture and mix until blended. Fold in white chocolate chips.
Divide evenly between four cups. Bake until tops are shiny and cracked and mixture beneath is hot and gooey, about 20 minutes.
